In medium size bowl mix the flour, salt, cream of tartar and cocoa. Leave aside for a while. In the mixer bowl at medium speed beat the butter and the sugar for 5 minutes, until fluffy and become creamy. Add the vanilla and eggs one by one, beating well with each addition. |
Add the flour mix beating in low speed just for the ingredients to combine. Do not beat more than that. |
Empty the beaten chocolat mix to a buttered and floured baking pan 20×30 cm/ 8"×12". |
In a bowl mix the sweetened milk, coconut, food coloring and vanilla. Mix well to combine. |
Pour the coconut mixture over the chocolate mixture, we have put into the pan, spreading across the surface. Bake in preheated oven at 180°C/ 350°F/ Gas 4 for 40'-45'. Test with a knife blade deep in the center of the pan, to come out clean. When cooked, remove onto a rack to cool completely before you cover it with Ganache. |

In small saucepan, heat the fresh cream to the boiling point. Remove from heat. Add the butter and stir to melt. At the same time, cut the chocolate into pieces in a bowl and put it to melt slightly in the microwave or bain marie. Pour the hot fresh cream into the bowl with the chocolate. |
Allow 5 minutes covered and then stir to mix the ingredients. |
Spread the ganache across the surface of the baked cake after it has cooled down completely. |
Cut into pieces only after the cover has solidify completely. |
The amount of coconut to add in relation to the amount of sweetened milk, so we have a somewhat dilute mixture has to do with how dry (moisture content) is the coconut. I would advise you to add the coconut slowly until you get the desired mix.
