Zucchini Fritters

Ingredients (∼30 pieces)

Wash the zucchini and grate on the coarse grater. Salt them lightly, mix and leave aside for 30' to draw their water. Clean and wash all the other vegetables and chop in a bowl. Take a handful of grated zucchini little and sqeeze to remove as much water you can. |
Add the drained zucchini to the bowl with the chopped vegetables. Mix. Beat the eggs lightly with a fork and add to vegetable mixture. Add salt and pepper. Mix. |
Sift the flour over the bowl with the chopped vegetables. Add the nutmeg and baking powder. Mix. If the mixture is very watery, add 1-2 tablespoons of flour. It should resemble a thick batter. |
Finally, add the crumbled feta cheese with a fork. Stir gently. |
Place a nonstick pan over medium heat. Add tablespoon light oil, which is repeated for each set of fritters. When hot pour in the mixture using a tablespoon pushing it towards the pan with another tablespoon. Let them fry 2'-3' from each side and remove them, when golden, onto absorbent paper towels. |
Do not use too much oil for frying zucchini.
They absorb too much of it and lose the taste and flavor of herbs and vegetables.

Do not fry for a long time. The green vegetables, are tastier if they retain their composition, the softness, and their scent.
