Chocolate Truffles
Truffles are small spherical, conical or shaped half egg sweets, usually a mouthful, but much larger too, with concentrated flavor content.
They can be made in many ways and with different flavors: dark chocolate or milk chocolate, nuts, dried fruits, cocoa, sour cream, liquor, candy, cookies, butter or peanut butter, spices, and more.
The truffles, which contain cream or butter, have a short shelf life and must be consumed immediately.
There are "Vegan truffle" adapted to current dietary trends, replacing animal milk with fruit milk. The "raw" truffles contain among others coconut oil, agave syrup, etc.

In a small bowl, chop the chocolate into small-small pieces and set aside for a while. In a nonstick pan, add the butter to melt together with the orange zest. |
Add the sour cream and allow the mixture to warm up well, almost to boil. |
Pour the hot butter mixture over the chopped chocolate. |
Mix well and if you want, add some yellow food color. Put the bowl in the refrigerator for about 1 hour, to thicken well, so we can fold the truffles. |
Sprinkle the work surface with icing sugar. Take with a spoon a little of the mixture and with your hands widen it, put in the center a chocolate Olive, close and shape it into a ball. Roll it in icing sugar. Continue in the same way until you finish the mix. Keep refrigerated. |
