Crostini is an Italian appetizer, which consists of small slices of toasted bread, coated with a variety of many different ingredients, usually salty.
The proposal here is a sweet version, with caramelized apple sauce and raisins in sweet and sour tonnes, adding balsamic cream, honey and pepper. The neutral cheese cream works coherently adding a mild taste to accept the strength of the sauce. The touch in the culinary climax of this excellent bite is fresh, chopped rosemary, with a very strong flavor and aroma.

Ingredients (6 Crostini)
|
Wash, wipe the apple and cut it in two. Remove seeds from one half. On the cutting surface cut into small cubes without peeling. | In a small skillet over medium heat put the cubes of apple, butter, raisins, half the rosemary, salt and water. |
Simmer all together, to caramelise and inflate the raisins. Gently stir occasionally until slightly softened apple. Sprinkle with balsamic cream. | Sprinkle with pepper and add the honey. If necessary add a couple tablespoons of water, to have a juicy apple sauce, not dry. Withdraw the pan from the heat and let its contents cool. | Cut the baguette into diagonal slices thick one centimeter (0.39 in). You toast them very light and grill them very little, just to brown their tips. Brush them with cream cheese and on top share equally their sauce. Add a little rosemary and sprinkle with honey. |
We can replace the balsamic cream with 2 tablespoons of white vinegar and 1 tablespoon honey.
