Dehydrated / dried fruit give it flavor. Some of these are slightly candied. Drizzled with warm honey and sprinkled with almond flakes surface helps flavor intensity. Let me not forget to praise you on how fluffy it was, but… it looks like it, I think, so you save yourself the verbiage!

Ingredients (~10 Cakes slices)

In mixer bowl put all the ingredients except the dried fruits and nuts. Beat well until the mixture to rise and become a thick cream. |
Stop the mixer and add to the bowl the dried fruit. Mix with a plastic spatula, gently and briefly to blend the ingredients. |
Take an oblong form 30×12cm (11.8×4.7 in) and invest with greaseproof paper. Butter the paper slightly and pour into the form the mixture of the2222 cake. |
Bake in preheated oven at 170°C (338°F, Gas:3.5) for 40'-45'. Test with a toothpick in the center to come out clean. Remove the form from the oven and let it cool for 10 minutes. After that, lift the cake from the baking sheet and touch to a wire base. |
Coating
Heat the honey and pour it hot at the surface of the cake. Sprinkle with almond flakes. |
The mixture of dehydrated (some of them and candied) fruits and nuts, which was used in this cake was a total of 200 grams (7.1 oz) & consisted of:

- ginger
- coconunt chips
- mango
- apricot
- banana chips
- cherries
- raisins
