Lactose Metabolism

Mammal infants are fed with breast milk, which is a rich source of lactose. However, lactose can not be used directly by the body. Therefore intestine secretes lactase enzyme, which breaks the molecule of lactose into two simple sugars: galactose and glucose, which can then be absorbed by the body.
Because milk is almost the sole source of lactose, most mammals stop producing the enzyme lactase as they grow and they stop drinking milk. But especially to humans, the continued consumption of milk from cattle and goats, and dairy items prepared from it, usually results in the continued production of lactase by the body even in old age, thereby allowing the decomposition of lactose.
Whether due to hereditary factors or due to the long absence of dairy products from the diet of these populations, it is possible in many people to lack the lactase gene. It is estimated that it occurs in about 30% of Europeans and more than 70% of the population of Asia, Africa and Oceania. The result is to create intolerance to lactose, ie to not the body being able to digest milk and lactose. If drinking milk or milk types the intolerance is manifested by gastrointestinal symptoms such as abdomen pain, discomfort, swelling and intense gassing.

Ingredients (~12 pieces)

  • 120g (4.2 oz) dried coconut
  • 70g (2.5 oz) stevia or sugar
  • 2 eggs
  • hazelnut praline-Nutella
In 2 different bowls divide the yolks from the whites and beat the egg whites to a stiff meringue.
Mix one egg with stevia or sugar. In installments add the coconut stirring it with a spoon (if necessary add a second yolk).
Add the meringue installments embedding it gently in the coconut mix.
From the mixture keep aside one, two tablespoons for coating. Of the remainder take in your hand a small amount of mixture and make balls.
Place them in the oven pan and onto greaseproof paper. With our finger make in the center small potholes.
With a spoon fill the potholes with hazelnut praline.
Sprinkle over a little of the mixture, which is kept to cover up the praline.
Bake in preheated oven at 170℃ (338℉, Gas:3.5) for 12' until golden on the edges.
