Ingredients (6 servings)
250g frumenty soup from Cretan coarse wholemeal
70g olive oil
1 grated onion
2 leeks thin in rings
1 green peppers, chili
1 fresh tomato
2 tbsp tomato paste
100g smoked pork shank (syglino)
salt & pepper
toasted croutons for serving
In a saucepan pour the olive oil and sauté the onion until golden.
Add the leeks and chili pepper and leave for a little to wilt and polish.
Add the chopped tomatoes and enough water to boil.
Once the water boils, add the frumenty, tomato paste, salt and pepper and stir vigorously. Half cover the pot and let the soup simmer until cooked.
Check and stir frequently and if necessary add warm water. Towards the end of cooking add the pork to the pot, cut into cubes to a boil.
The soup is served warm and accompanied with croutons.
