For the beginning of the year, in 2016 the first post of Kitchen Stories proposes an idea of chocolate truffles, with raw ingredients and no sugar. The joy of pleasure without remorse and the lighter feeling of dessert.
Bright aromas of orange and cocoa, with a sour aftertaste from the juice of orange and cranberries. Dried fruits that are used are very tasty and quite sweet. This is why sugar was replaced here by a spoonful of stevia and this is optional because some people can and do not need this extra sweetness.

Ingredients (14 truffles)

Remove the internal hard core of the dates and place them in the bowl of the food processor cut in two. Add the plums, orange zest, spices. |
Continue with cocoa, brandy, butter and the juice of half an orange. If you need more moisture to mashed, add a couple tablespoons of juice. Puree ingredients in a relatively tight mixture. |
Pour the mixture in a bowl and add the candied fruits, the stevia… |
… and the cranberries. Mix well with a wooden spoon. Put the mixture in the fridge for half an hour so that we can work on it. |
Shape small balls (mine are a little long), which you roll onto cocoa. Place them a non-stick surface and put briefly in the refrigerator, then… enjoy with a sound bite. |
