Ingredients (6+3 Rolls)

  • 500g basket of Limnos Feta
  • 500g slice of Kalavryta Feta
  • 500g spinach
  • 3-4 leeks
  • 3-4 spring onions
  • 1 dry onion
  • 3 eggs
  • a little fresh mint
  • olive oil, salt, pepper
In a large pan over medium heat, put olive oil, chopped onion, sliced green onions and cut leeks into 2 cm pieces. We let them fry for a while until they shine. At the same time, blanch the spinach for a few minutes, drain it and add it to the pan. Add the fresh mint to flavor the filling. Season with salt and pepper and mix well.
Remove the pan from the heat and after the mixture has cooled, add half of the Kalavryta Feta and half of the crushed Lemnos basket Feta. Add some pepper and beaten eggs. We leave them aside to prepare the dough.

Dough

  • 450g flour
  • ∼260g water
  • a little oil
  • ½ tbsp. salt
  • 1 tbsp. white vinegar

Knead gently to get a soft dough, which we divide into 9 balls.

We take one ball at a time and open a sheet with a diameter of ∼40 cm, with the help of a little flour & a little niseste or corn flour.
Sprinkle a little olive oil on the opened sheet and fold one edge over the sheet.
Take spoonfuls of the filling and place them scattered on the opened sheet.
We roll starting from the bottom side upwards.
Join the two ends and place the roll in a greased oven tray lengthwise, with the joint facing down.
Fill the 6 rolls with spinach and leek filling and the 3 rolls with feta cheese. You decide what to do.
Pour a little olive oil on top of the rolls and spread it with a brush.
Bake in a preheated fan oven at 170℃ 338 ℉ Gas Mark 3.5 (∼4) for 50' or until the rolls are pink on top and bottom.
