Ingredients (4-5 Servings)

  • 1 onion, chopped
  • 2 medium tomatoes, seedless, in bite-sized pieces
  • 2-3 celery stalks, cut into 2 cm pieces
  • 2 carrots
  • 2 medium potatoes, bite-sized pieces
  • 1 red pepper, cut into small pieces
  • 60 gr olive oil
  • 60 gr sour frumenty/trahanas
  • 1 vegetable stock
Put the olive oil in a saucepan and heat over medium heat and sauté the onion for 2-3 minutes until it is translucent.
Add the chopped vegetables, mix well so that they are also lightly browned.
Then add ~2 glasses of water and the vegetable broth and boil for ~10 minutes until the vegetables are soft. Stir occasionally.
Add the frumenty/trachanas and if necessary, add hot water. Stir carefully.
Boil the soup until it thickens and the vegetables are well cooked. Adjust the texture and thickness to your liking.
