Ingredients 8-10 Servings)

  • 6 sheets of phyllo pastry
  • 5 medium-sized eggs
  • 250gr fresh milk
  • 100gr olive oil
  • 1 tsp salt
  • 200gr-250gr Greek feta cheese
  • 200gr emmental cheese
  • 1-2 tbsp dried mint
  • 1 can of sparkling water 330ml
In the Pyrex carafe, combine the milk, olive oil, salt and eggs. Beat them briefly to homogenize.
In a bowl, crumble the feta cheese with a fork and add the grated edamame.
Stir in the mint, in as much quantity as you want. Mix well and set aside for a while.
Spread 1 sheet of pastry on a round, greased baking sheet with a diameter of 32-34 cm, leaving the edges sticking out. Cut 1 other sheet into large pieces and transfer them only to the base of the baking sheet, above the 1st sheet, so that they overlap each other. Sprinkle with ⅓ of the cheese mixture.
Sprinkle the entire surface of the base with 3-4 deep spoonfuls of the Pyrex sauce.
Repeat the same process for the next 2 layers.
Pour the remaining sauce over the last layer and sprinkle with the last of the cheese mixture, after turning any protruding leaves inwards. Finally, cover the whole thing with the last 2 leaves and dip them around the pan with a brush.
Carefully empty the can of mineral water.
Let the pie absorb it for a few minutes and score the surface radially into large pieces.
Bake in a preheated oven air fryer, at 175℃ 347℉ Gas Mark 3.9 (∼4) for ∼40΄ or until cooked and golden brown.
