Black-Eyed Beans's Salad

Salad with black-eyed beans and herbs. The addition of smoked salmon makes it even more delicious and gives it its characteristic flavor. Try a salad, that can easily replace the main dish on the table and is second to none in flavor, vitamins and fiber! It can accompany almost any dish you like. I prefer it plain, enjoying all the flavor it gives.

The black bean is widespread in many parts of the world and particularly popular in Asia, southern Europe, the Southern United States and South America.
In the kitchens of the world they have been cooked in various ways, very often in the form of puree with the addition of aromatic herbs, onion and pepper and then fried in hot oil, like croquettes. And a lot more variations.
In Greece and Cyprus we tend to eat them more as a salad and less frequently as a stew or something else.

Ingredients (2 servings)

  • 250 gr / 9 oz black-eyed beans
  • 1 fresh onion
  • 3 tbsp chopped dill
  • 1 large red pickled peppers
  • 100 gr / 3.5 oz smoked salmon
  • 5 tbsp olive oil
  • 3 tbsp vinegar
  • salt & pepper

Instructions

Place the beans in a bowl with fresh water and let soak for half an hour.
In a medium saucepan boil for 20' or until cooked well and softened. When ready, drain into a bowl.

Wash and finely chop the onion and dill. Drain the peppers and cut into small squares. Cut the salmon into small bites.
Finally, mix all ingredients in a bowl with beans and add spices. Taste and correct.
