Homemade Bread

Enjoying a hot fresh bread, made at home, is a very pleasant for all of us who cook for our families, our friends, and of course, for ourselves.
Make it and dare to combine wonderful flavors: Spices, herbs, dried fruits and whatever else we like. The result will be a fluffy delicious homemade bread, with all our love!

Do not be daunted by the process of kneading. When you have some time available, with a little effort you can enjoy a delicious healthy bread with the ingredients you choose.

Ingrendients (2 loaves)

  • 300 gr/10 oz wholemeal flour
  • 200 gr/7 oz all purpose flour
  • 1 bag (9 gr/0.3 oz) dry yeast
  • 1 tsp sugar
  • 1 tsp sea salt
  • 1 shot red wine
  • 1 shot olive oil
  • 1 tsp cardamom seeds
  • ½ cup water
  • 100 gr/3 oz pitted green olives

In addition, for the second loaf:

  • 10 dried prunes
  • 5 nuts
In a bowl mix and sift both flours.
In ½ cup of lukewarm water, dissolve the dry yeast and sugar and add to flour mixture.
Add the oil…

…and the cardamom seeds, crashed.
Start to stir the mixture until you have a soft dough that hangs lightly from your hands. Add a little warm water if necessary.
Divide the dough into two equal parts and add the olives cut in pieces. Dispose of the kernels.
In the other half of dough, put the dried plums cut in half, and nuts cut in chunks with a knife.
Knead and give them the elongated shape of a loaf.
Lay parchment paper on a baking pan and place the two loaves.

Instructions

Cover with a second baking sheet and two kitchen towels. Place the pan in the oven by adjusting the temperature to 50°C/ 122°F and allow to rise for 2 hours.
When the loaves are well risen, remove the covers, increase the temperature to 180°C/ 356°F, and bake for ½ hour.
To make sure that they are ready, knock on them to hear a "hollow" sound from inside.
Let it cool on a rack.
