Ingredients Dough (40-45 pies)

Place the saucepan on the fire, low temperature and add the oil and milk to warm slightly. Should be 30°C, so that it feels warm to our little finger. No more than 30°C because the yeast will not rise the dough. Remove from the heat and dissolve the cube of yeast in your hand. |
Add slowly the flour. Knead until you have a soft and pliable dough. You may not need to use all the flour. We gather the dough into a ball, cover the pan and set aside for 1 hour until the dough doubles in volume. |
In the meantime we are preparing the filling: With a fork dissolve the cheese. In a separate bowl, beat the 3 eggs and the 2 egg whites and add to the cheese mixture. Add the spearmint and stir well. |
After 1 hour check that the dough has risen well. |
Spread baking sheets on two large shallow baking pans. Cut small pieces of the dough to make small balls the size of a walnut. Place the balls onto the baking sheet keeping some distance between them because they will risen again. |
Take the first ball, and spread a small round dough sheet in our hand. The dough is soft and easily molded. |
Fill each pie with a teaspoon of filling mixture and turn to cover up with the rest of the dough. We press the edges to stick around well. |
Place the pies on the baking sheet well spaced. Dissolve the two egg with 2-3 tablespoons of milk and brush the pies. Put in preheated oven at 180°C/ 350°F/ Gas Mark 4 for 20 minutes or until cooked through and get a golden brown color. Repeat with the second baking sheet o until you run out of ingredients. |
You can choose to make a smaller amount, for a buffet or table.
Eaten pleasantly lukewarm or cold.
