Coconut Cake

Cake (6 servings)

  • 180 gr/ 6.5 oz flour
  • 120 gr/ 4 oz sugar
  • 70 ml/ 2.5 fl oz vegetable oil
  • 200 ml/ 7 fl oz milk
  • 2 tsp baking powder
  • 1 tsp vanilla essence
  • ½ tsp salt
  • 2 eggs
In a medium sized bowl add the milk, oil, eggs and sugar.
Stir gently.
Sieve the flour with the baking powder and salt.
Add it to the egg mixture.
Add the vanilla.
Pour the mixture to a medium-sized oven pan.
Bake in preheated oven at 180°C/ 350°F/ Gas Mark 4 for 35'-40'
Test with a knife blade that comes out clean.

Frosting

  • 1 cup/ 90 gr/ 6.5 oz flaked coconut
  • 3 tbsp butter, softened (room temperature)
  • ⅓ cup/ 80 gr/ 2.5 oz caster sugar
  • 3 tbsp sour cream
In a small bowl mix all the ingredients of the frosting.
When the cake is cooked remove from the oven…

…within 10 cm/ 4" from heat (grill) for about 2'-3' or until the frosting gets a light brown color.
