Ingredients (10 servings)

Cut the gruyere cheese into small wedge-shaped pieces. Peel and wash the garlic cloves. Place the pepper and thyme in a bowl. Add the garlic. |
Wash and pat dry the meat, with paper towels. Put on a large baking pan. With a sharp, fixed blade knife, open incisions in various parts of meat and push in a clove of garlic, sprinkled with the spices… |
…or a piece of gruyere cheese alternately in many parts of the leg. |
When you finish, sprinkle with olive oil and salt, pepper and dried thyme. Cover with 2 large baking sheets and place in the oven at 200°C/ 400°F/ Gas Mark 6. |
Clean, wash and cut the potatos into large chunks (quartered). After ~30 minutes remove the pan from the oven and fill the gaps with the potatoes. Brush them with mustard… |
…and sprinkle with salt, pepper and thyme or oregano. Do not add water. Reduce oven temperature to 180°C/ 350°F/ Gas Mark 4, cover again with the baking sheets and place the pan in the oven for 1 hour more. |
In 1 hour remove the pan from the oven, turn the leg on the other side, sprinkle with lemon juice and a little hot water if needed, cover again and return the pan to the oven for about another 1 hour. |
10′ before the end, remove the baking sheets, check the food, add some hot water (if necessary) and let it cook to get golden brown. Remove from the oven, let stand a while and serve. |
