Almond Paste (∼400 gr/ 14 oz)

Initially we make the almond paste which is needed for the cake mixture. You will use half the amount. Put the other half in the freezer for future use. Put all the ingredients in a food processor and beat on high speed to be mashed and homogenized. |
Pour the beaten mixture to a transparent film, wrap and refrigerate until needed. * If you find a ready market almond paste, you can omit this step. Mash it alone, with the blades of the mixer and continue with the preparation of the cake. |

Mix the dry ingredients: flour, baking powder and salt. Set aside. In the same bowl of the mixer that you mixed the almond paste, put the sugar and eggs. Beat to whitewash and inflate. Add the softened butter and vanilla. Beat some more. |
At this stage the mixture may look like crumbs this is normal. Take the prepared almond paste from the refrigerator and add to the beaten egg mixture to be homogenized. Mix with a spatula the dry ingredients. |
Grease and flour a form 22cm/ 9", in the shape of a Christmas tree and pour the mixture into the cake. Spread carefully with a spatula. |
With knife, make a cut along the center of the form. This would prevent the swelling at the center. We want a level cake. |
Preheat the oven to 180°C/ 350°F/ Gas 4, with resistance up and down. Bake for 40'-45' or until a toothpick comes out clean. Let the cake onto a rack to cool and roll it over on a platter. Decorate with what you like, or sprinkle with powdered sugar. |

- 3 tbsp grated almonds
- 1 tbsp cinnamon, powder.
I used colorful candy for "lights" and crushed green candy.
