Ingredients (10 pieces)

Cut the olives to remove the pit or buy pitted olives. If you buy pitted, wash them well for the salt and any preservatives. Drain them well. |
Clean and chop finely the vegetables. Saute them with olive oil, unil all juices evaporate. Take them with a slotted spoon and put them in a large bowl. Leave aside to cool. |
In the vegetable mix, add the drained olives and feta cheese crumbled by hand. Add the spices but no salt. Divide the the mixture into 5 equal parts. Spread nonstick paper in a shallow baking pan and grease. Spread a phyllo pastry sheet (double if crust) with the long side in front of you and grease. Spread part of the filling over the whole surface of the sheet and roll to be wrapped around. |
Transfer each pie roll to the pan, paralel to the each other. Repeat until you have no more phyllo or filling. Grease lightly over the surface of the pie as they are placed. Bake the rolls on low rack of the oven at 200°C/ 400°F/ Gas 6 for ¾ of an hour. Check if they have been cooked underneath. |
Remove the pan from the oven and let cool on a rack. Cut, and enjoy a delicious pie accompanied with a salad as a main dish or as a snack for any time. |
