Spinach with pine nuts and an red egg sprinkled with sweet paprika.
Served in individual portions in small ovenproof clay pots.

Ingredients (3 servings)
500 gr/ 1.1 lbs fresh spinach
50 ml/ 1.7 floz olive oil
2 onions, finely chopped
100 gr/ 3.5 pine nuts
50 ml/ 1.7 floz dry white wine
salt & pepper
3 eggs
sweet paprika
Clean and wash the spinach. Drain in a colander.
Chop the onions and sauté in olive oil, until transparent and soft.
Add the pine nuts to roast slightly. Mix.
Pour in the drained spinach.
If it is large, cut it into smaller pieces.
Mix.
When it have lost some of its juices, add the wine and let it boil, to cook and the juices have evaporated, but not dry. Salt and pepper.
Take individual ovenproof forms and distribute the food in them.
With a fork, open a puddle in which we break the eggs.
Place the forms under the grill for a while to cook the egg.
Sprinkle with paprika and enjoy.
If you prefer, you can cook in a large pan and add more eggs.
