In large skillet, add the olive oil and saute the chopped onion. Add the mushrooms and let them saute and losetheir juices. In the mean time cut the sausage and bacon into pieces and add to the pan mixture to cook. |
In a bowl, beat the 2 eggs and one yolk (keep the egg white in a separate bowl for later), and pour them ove the mixture in the pan. Allow to thicken as an omelette, and remove the pan from the heat for the mixture to cool. |
Place the ingredients on the bench, in front of you: The egg white beaten with a fork, the filling mix after it has cooled, the cubed cheese and the pepper cut into strips… |
…and one phyllo opened onto a baking paper. The other phyllo still in the fridge until needed. With a brush spread some of the egg white and sprinkle some grated gruyere in the middle and along the phyllo covering the ⅓ of it. |
Over the grated cheese in the center, put half the filling mixture, half cheese and half the pepper strips. Sprinkle with grated gruyere. |
With a knife, cut the sides of the dough, leaving a distance of 1-2 cm/ ½" from the filling, in parallel strips using a ruler and a width of 2½ -3 cm/ 1". |
Turn the edges of the dough over the top and bottom to cover the beginning and end of the filling. Turn and cut each strip to cover the filling. One strip from the left and one from the right in turns. |
Brush with egg white, the surface of the cake, and sprinkle with sesame seeds. Transfer the cake with the baking paper, in a large oven pan and prepare the other half, the same way. Bake in preheated oven at 180°C/ 350°F/ Gas 4 for 30 minutes or until the phyllo gets golden and cooked. |
