Topping
Prepare the dough in a bowl. Sift the flour and add the butter and salt. |
Add the water slowly, until you have a soft dough, which will stick in our hands.
Do not knead too long. You may not need all the water. Transfer the dough to a lightly floured surface… |
…and roll out a rectangular sheet measuring 25×35 cm/ 10"×14", approx. Spread the jam on the surface of the dough, leaving around a margin of 1-2 cm/ ½". |
Wet the edges with water and turn toward the jam. Roll gently (not tightly), starting from the shortest side and let the join facing down. Cut a piece of greaseproof paper or baking paper, a little smaller than the roll and grease lightly. |
Place the roll on the paper. Wrap the paper twisting at both ends, creating a small "boat" containing the roll. Wet the surface of the roll with some milk using a brush, and sprinkle with brown sugar. Bake for 30'-40' or until golden. |
