Ingredients (8 servings)

Wash cherries and remove stems and seeds with the special tool. |
Separate egg whites from the yolks and beat the egg whites to stiff meringue adding the salt and the cream of tartar. |
In an electric mixer beat the yolks with the mascarpone. Keep adding the stevia (sugar) beating until it rises. |
Add the almonds crumbs. Add the flour and baking powder, sieved, alternating with milk. Stir gently. Finally incorporate the whipped meringue gently with circular movements from the bottom up. |
Butter a cake mold and sprinkle with sugar. Pour half the beaten mixture and spread the cherries over it. Cover with the remaining mixture. Bake in preheated oven at 180°C/ 360°F/ Gas 4 for ~40'. |
We pick cherries are not very mature. They can withstand baking heat.
If you do not have the special tool to remove the kernels, do it with a knife, cutting the cherries in two.
