Ingredients (4 servings)

Put the flour, milk, sugar, salt, eggs, butter, and lemon zest in a bowl and whisk to mix. |
Butter and sprinkle with a little sugar a non stick pan with base Ø18cm/ Ø7.1". Pour the batter mixture in the pan. |
Wrap the handle of the pan with aluminum foil. Bake in preheated oven at 190°C/ 374°F/ Gas 5 for 20' until golden and risen. |
Remove the pan from the oven, leave it on a rack to cool slightly and stabilize the shape of Pancakes in the pan. |
Spread the raspberries on the surface of the pancake and sprinkle with icing sugar. |
