Ingredients (9 large pieces)

In a large bowl, grate the gouda and crumble the feta. In a mixing bowl add the eggs, flour, milk and pepper. Melt the butter gently without burning and add to the mixture of ingredients. |
Grease a pan dimensions 30×40cm/ 1×1.3ft with a brush and lay at the base half of the phyllo sheets, well oiled, one by one. Pour the filling mixture, that you have prepared. Spread it around the pan. Don't mind if some phyllo sheets are slightly folded. |
Turn inwards, towards the filling, the edges of the phyllo sheets, so that they enclose the filling, brushing them well with olive oil. |
Cover with the remaining phyllo sheets. Do not forget to oil them well, one by one. With a sharp knife cut the parts of the phyllo sheets going over the pan. |
Scribe carefully the pie in squares without letting the blade of the knife reach the filling. Bake at 180°C/ 360°F/ Gas 4 in air for ~ 45 min or until the phyllo sheets get golden. |
