Ingredients (~32 biscuits)
|
In a small bowl mix the flour, baking powder and salt. In a large bowl add the softened butter and sugar and beat with an electric mixer until the mixture becomes white and fluffy. | Add eggs one at a time, beating constantly until incorporated into the mixture. |
Subsequently reduce the speed of the mixer and add a little bit of the flour mixture sieved. When the dough begins to tighten, leave the mixer on edge and at the last stage gently knead by hand. |
Add the dried cranberries and the white chocolate, cut into very small pieces. You don't need to over knead, just to mix the ingredients. Cover the bowl and refrigerate for an hour. |
Taking a quantity of dough into balls mold small size nut and push with your palm to widen. Place the biscuits thinly on pan lined with a greaseproof paper. Bake in preheated oven at 180°C (356°F, Gas 4) for ~10-12 mins until lightly golden on the edges. |
While they are in the first oven pan prepare the second in the same manner. Remove from oven and let cool completely. |
Topping
|
In a medium size bowl add the cream cheese and icing sugar sifted. |
In a bain-marie, melt the white chocolate, stirring with a spatula to melt well. |
Beat the cream cheese with the powdered sugar and add ¾ of melted white chocolate. You keep a part of it for the final coating. |
Take one biscuit and brush on it with a spoon a little of the mixture of cheese/ chocolate. Then spread across the surface until the edge of the cookie. |
Immediately sprinkle with the chopped cranberries and pink pepper, to stick onto the icing. |
With a fork, take a little melted chocolate and let it drip over the cranberries and pepper, moving the fork from side to side, up and down. |
