Ingredients (6 servings)

Caramel
First prepare the caramel. In a saucepan, add the water and sugar and boil until it becomes caramel candy. Pay attention, the caramel burns, gets darker and bitter when overcooked. Pour in a round non-stick form 23cm (9.1 inches). Leave it aside to wait . |
Peel 3 oranges and cut into slices 4-5 mm (0.2 inch) thick. |
Lay one slice next to each other directly on the caramel. Leave it aside to wait. |
Divide the eggs into yolks and whites, putting them in separate bowls. |
Beat the egg whites to stiff meringue and leave it aside for a while. |
Beat the egg yolks with the sugar and a pinch of salt until the mixture turns white. Beating add the oil and vanilla. |
Gradually add the flour, sifted with baking powder. |
Add the whipped meringue, incorporating it a little by little into the mixture. |
Finally add the zest two oranges. Mix with a spatula… |
…and pour the mixture, spoonful by spoonful, onto the orange slices… |
…until the mixture is finished and all orange slices are covered. Bake in preheated oven at 200°C (392°F, Gas 5.7) for ~40'-45'. |
Syrup
Till the cake is baked, prepare the syrup. In the same pan, we made caramel, boil together the syrup ingredients for 4'-5' and when you get the cake from the oven pierce with a wooden skewer and pour the syrup. |
Leave to absorb and to coll. |
Finally, place a serving platter over the form, holding it tightly and with a quick motion, turn it upside down. This way the candied orange slices come on top. |
