Peel, wash and chop the vegetables accordingly:
You chop the mushrooms into slices and divide the broccoli into small florets. Cut the carrot with the peeler in wide ribbons and peppers and tomatoes into cubes. Cut the celery root into irregular bite size. In large skillet or wok heat the oil and add the chopped onion, ginger and garlic into thin slices. |
Sauté for 2 minutes to shine and show off their aromas. Pour the tomato puree to sauté. Dissolve the cornflour in 100 gr (3.5 oz) tap water and add to pan. |
Gradually add the broccoli, celery root, peppers, tomatoes. Carefully stir the vegetables to take their place. |
Continue with the mushrooms and carrot ribbons. Sprinkled with spices and cover the pan until cooked and the vegetables are tender, about 6'-7'. Do not cook much. Let them keep to the tooth, to be a little crunchy. |
At the same time cook the pasta al dente or according to our tastes. Serve the pasta in large bowls, add the vegetables and enjoy using fork and spoon for better distribution of ingredients! |
Another suggestion is instead of spaghetti to use noodles.
