Ingredients (∼30 croquettes)

Boil desalted cod fillets in a saucepan for 7'-8'. Drain from the water and place them on kitchen paper to dry.
Slice the cod, simultaneously removing clips and rinds. Alongside mash the boiled potatoes with a fork. In medium size bowl add the cod fillets, mashed potatoes and all the other ingredients. Mix well with a spoon and put the bowl in the refrigerator until you prepare the garlic sauce. |
Garlic Dip
Soak the bread in cold water and drain a little bit, squeezing it in our handfull. Put in blender with the remaining ingredients of garlic dip and beat well to homogenize. Taste and correct accordingly. Serve in a bowl, sprinkle a few drops of olive oil and sprinkle with paprika. |
For frying, pour a little oil in a nonstick skillet to heat and place one by one tablespoons full of the mixture of cod, spaced. |
Fry well on medium heat, first from one side and then turn the other, until browned. |
Remove the fried croquettes from the pan and place on absorbent kitchen paper. Repeat frying, each time adding a few tablespoons of oil until it the mixture is finished. |
