Briam is one of the most popular dishes of Greek/ Mediterranean cuisine and one of the most delicious when vegetables are in season.
The richness and variety of vegetables is such that it is in our own palate the choice of what we like more or wath are simply accumulated in our refrigerator!
My tasty version is by adding the contents of a bottle of tomato juice cocktail "Bloody Mary Mix", which gives a spicy, peppery tats.

Ingredients (8 servings)

Peel, wash and cut into equal-sized (as possible) slices the ingredients with thickness ~½ cm (0.2 in). Keep tomatoes for the end. Cut the onions and garlic too into thin slices. Pour the vegetables into a large, deep pan, salt and pepper, add turmeric, parsley and canned tomatoes. Stir gently to mix. Spread the surface and cover with tomato slices, drizzle with oil and tomato juice cocktail "Bloody Mary Mix". |
There is no need to add water, the vegetables will release their own. If necessary add half a cup of hot water, during baking. Cover lightly with wax paper in pan and bake in the oven at 200°C (392°F, Gas 5.7) for ~1:45'-2:00'. After the first hour we remove the wax paper and check if it is cooked and if the water has evaporated. |
This is on the shelves of the wine cellar, as it is the basis for the cocktail bloody mary.
The fewer potatoes the more dietary it becomes. If you remove them altogether, the dish is Low Carb.
Our food should be left with the olive oil, but not dry, to make it more tasty.
