Egg french toasts with slices of stale toast for an easy, simple and filling breakfast, fried and served with caramelised fresh figs. The cream cheese gives flavor and rich, soft texture to caramel slices.

Ingredients (4 servings)

Sprinkle the sugar over the surface of a frying pan. |
Place it over medium heat and leave, without stirring, to begin to melt the sugar and caramelize slightly. Chop the figs in 4 and put them into the pan. |
Turn the figs carefully to saute and be well caramelised. At the moment the caramel will become very watery after figs will leave their juices, but you will quickly begin to caramelize again. Remove from heat when the caramel has the fluidity of concentrated syrup. |
In a bowl, beat with a hand mixer, the cream cheese to get fluffy, adding honey. Leave it aside for a while, we will need to serve.
Put it on a flat surface one by one slice of bread and cut, in round shape/ tray. |
In medium size bowl, add the milk, sugar, cinnamon, vanilla and eggs. Beat well with whisk to make a mix. Dip the slices to soak them well on both sides. |
Place a skillet over medium-high heat. Inside, add the butter and oil to burn. |
Add 4 bread slices or those that fit the pan. Fry until golden on both sides. |
Take them out and place on a paper towel to drain. Serve two slices on each plate along with 2 tablespoons cream cheese and caramelized figs. Drizzle the French toast with caramel. |
