Mexican flavors are lovable, simple, easy and delicious. Sate with tasty filling options to escort a quick meal after work or to greet friends with a no laborious but definitely delicious meze, accompanied with a spicy guacamole salad and spirit irreqularities.

Quesadillas, Guacamole &…Tequila

Quesadillas (2 servings)

  • 4 tortillas
  • 4 tbsp olive oil
  • 100g (3.5 oz) spinach, scalded for a while
  • 12 cherry tomatoes
  • 100g (3.5 oz) blue cheese
  • 150g (5.3 oz) mozzarella peels
  • a little curry & salt
Pour a tablespoon oil in large nonstick pan over low heat. Put up a pie and spread scattered half well drained spinach and half cherry tomatoes cut in half. Sprinkle with curry powder and a little salt.
On top add the crumbled blue cheese and cover all the peels of mozzarella.
Place the second sheet of pie / tortilla on top and press lightly with your palm. Cover the pan with a lid.
When cooked and golden brown on one side, carefully turn the other. Remove to a plate and continue with the next quesadilla.

Guacamole (4 serving)

  • 1 ripe avocado
  • 1 lime, juice and zest
  • ½ tomato
  • ½ red onion
  • some parsley
  • 2 garlic cloves
  • ½ hot chili pepper, fresh or flaked
  • salt
Finely chop the parsley, onion, garlic and tomato in cubes.
Open the avocado and cut it diced. Pour the juice and zest of lime. You collect all the ingredients in a bowl. Add the hot pepper or flakes and season with salt.
Stir, taste and correct the taste.
