Ingredients (~6 servings)
| Wash, wipe off the orange and remove the zest. Squeeze it take the juice. Assemble them in a bowl and cut in small pieces the dried fruit. Leave the raisins whole. Mix well and leave them to absorb the juice of an orange. | In a large mixing bowl, add the oil, sugar and eggs. Beat with an electric hand mixer, thoroughly to make a frothy mixture and viscous. |
Drain the dried fruit by passing them through a colander and sprinkle with a tablespoon of flour. Pour the orange juice to the egg mixture. | Sift the flour with the baking powder and baking soda. Add the mixture of flour and semolina in the bowl. Mix gently and very little just to unite the ingredients. | Add the poppy seeds. Mix. |
Finally pour in the mixture of the bowl dried and floured fruits. | Invest an oblong cake form with greaseproof paper, wet. Squeeze with your hand to drain well, stretch and lay. Inside the form pour the beaten mixture of cake. | Bake in preheated oven at 180°C (356°F, Gas 4.2) for 40'-45' or until cooked. Test with a knife blade that comes out clean. |

We can use just olive oil or mixed with corn oil. Your choice.
