Ingredients (6 servings)

  • 500 g (1.1 lbs) black giant beans
  • 70 g (2.5 oz) olive oil
  • 700 g (1.5 lbs) stew onions, peeled
  • 2 garlic cloves
  • 4 carrots, large sliced
  • 200 g (7.1 oz) tomato concasse
  • 100 g (3.5 oz) dried or sun dried tomatoes
  • 2 bay leaves
  • 500 g (1.1 lbs) water, warm
  • 2 tbsp oregano
  • salt, pepper, sweet paprika
From the previous evening soak the giant beans in water with a tablespoon of salt. The next day rinse them and boil them in enough water to boil well, and soften them.
In a large and deep skillet over medium heat add half the olive oil, or oil from the maintenance of tomatoes to warm.
Add the stew onions, garlic without the germ and carrots. Mix carefully to saute and shine for 15 minutes. Salt and pepper lightly.
Continuing saute, pour the crushed tomatoes onto the onions. Add some warm water and let it boil on low heat, covered. Stir occasionally.
Halfway through the cooking sauce, add the bay leaves and sundried tomatoes.
Let the sauce be cooked, but not dried from the waters. Add more hot water, need to be very juicy.
When the giant beans boil, drain them and pour into baking pan. Add salt and pepper, sprinkle with oregano and paprika. Spread on the sauce of onions and sprinkle with the remaining oil. Mix gently.
Bake in preheated oven at 200°C (392°F, Gas:5.7) for ~25'-30'.
