Ingredients (∼25 Biscuits)

In fixed mixer bowl put the sugar and butter, cut into pieces. Beat well until they rise to the ingredients and the mixture becomes white, ∼3'. |
Continue beating and add the egg yolk. Let them beat and swell. |
Meanwhile in a large bowl sift the flour, cornstarch, cocoa, salt, baking soda and baking powder. |
Reduce mixer speed and pour the mixture of the flour in portions in the mixer bowl. |
Mix well after each addition. Add the vanilla, red color and 2 tablespoons of milk, if needed. |
Beat a little more for the color to go everywhere. Add as much color as needed to turn red the mix of the cookies. We put the mixer bowl in the refrigerator for 30'-35', or as necessary to tighten the mixture and easily be formed into balls. |
In a dish put the icing sugar. Take a bit of dough and shape into little ball the size of a walnut. You roll it on the icing sugar so as to be dusted everywhere. |
Place each little ball into a shallow baking pan, lined with greaseproof paper, and spaced. Bake at 190°C (374°F, Gas 5) for 12'-14' to swell and crack the surface. Remove the pan from the oven, let them cool slightly in the pan and then put them on a rack to cool completely. |
