Ingredients (2 sandwiches)

Remove 1-2 outer leaves from the fennel and rinse lightly. You cut in half and each half cut into thin crescent slices. |
Add the sliced fennel in a pan with olive oil. Let them caramelize well until browned. |
Stir occasionally and at the end add salt and pepper. Withdraw the pan from the heat and leave aside to cool. |
In a medium size bowl add crumb from canned tuna well drained. Add the cheese, caramelized fennel and parsley. Taste and add salt and pepper accordingly. Mix well to combine the ingredients together. |
Pass the bread from the toaster to lightly toasted. Put a strong dose of the cheese mixture in a slice of bread and cover with the other. You press gently to close well. Cut in half vertically and serve with a fresh salad, accompanied with dry white wine. |
