Ingredients (∼30 pieces)
| In the mixer bowl, add the oil and sugar and beat until almost completely melted the sugar. | Add finely grated carrot, cinnamon, orange zest, the orange juice and half the semolina. Beat well for a while. |
Add the flour with the baking soda, and beat them again slightly and very little to homogenize the mixture. The remaining ingredients will incorporated kneading by hand. | As the dough is into the mixer, add the remaining semolina and grated walnuts. | Knead gently until you have a soft dough. Do not knead very much. |
Shape small round balls or whatever shape you prefer and place, spaced in oven pan lined with greaseproof paper. Light chart their surface, with a sharp knife or scissors, crosswise. | Bake in preheated oven at 200°C (392°F, Gas 5.7) for 15 minutes until golden light from above but also from below. Remove the melomakarona from the oven and let them cool completely. | Syrup

In a small saucepan, add water, sugar, honey and half orange cut into pieces. Boil all together over medium heat for 4'-5'. | Remove the pieces of orange and dipped in hot syrup cold melomakarona some at a time. Remove them to a plate until you gather all. | In a platter spread finely crushed walnuts and on top place in a series, the honeyed melomakarona. Sprinkle with a tablespoon of the syrup, if you have left over. Sprinkle with walnuts and repeat a second layer. |
