Ingredients (12 cookies)
250 g (8.8 oz) flour, sifted
100 g (3.5 oz) sugar
1 tbsp baking powder
1 tsp salt
110 g (3.9 oz) cold butter
1 orange, zest
2 eggs
100 g (3.5 oz) sour cream thick, cold
10 strawberries
60 g (2.1 oz) caster sugar
4 tbsp orange juice
In the bowl of food processor, add the flour, sugar, baking powder, salt, cold butter cut into cubes and orange zest. Beat for very little at a very low speed. The mixture should look like wet sand.
Add the sour cream and one egg, you will keep the other for spreading. Beat for a while to join the ingredients. It will be a mixture slightly sticky.
Pour on a floured surface and add the chopped strawberries. Dust your hands with flour and knead gently just to integrate the strawberries.
Roll out a thick sheet of thickness 2 cm (0.79 in) and with coup pate cut Ø7 cm (Ø2.8 in) discs. Place in baking pan, covered with greaseproof paper. Beat the egg white from the second egg with a little water and brush, the biscuits.
Bake in preheated oven at 200℃ (392℉, Gas:5.7) for 20'-25'. Remove them from the oven and let cool for 10 minutes. Mix the icing sugar with the juice of an orange and pour the icing onto cookies.
