The classic Niçoise salad is a famous salad from Nice, France. Today it has spread to all over the world, since it is so tasty and beloved by many.
As a salad based on the best quality of ingredients and has great "flexibility" and is customizable by adding various vegetables, as colorful peppers, chives or fresh artichokes, which make it delicious, colorful and seductive. The base, however, always include tuna, anchovies and hard-boiled eggs. Yours!

Ingredients (~4 servings)
5 leaves of lettuce, hand chooped
2 hard boiled eggs, cut in 4
2 cans (250g- 8.8 oz) tuna in water, drained
2 boiled potatoes, crushed with a fork
100g (3.5 oz) fresh green beans, boiled
2 small tomatoes, cut into bite-size
1 small cucumber sliced
4-5 anchovy fillets
50g (1.8 oz) olive slices, pitted
1 onion, thinly sliced
salt
pomegranate for garnish (optional)
In a large bowl place one by one the ingredients in layers alternately and add salt sparingly.
Lemon Vinaigrette
5 tbsp olive oil
4 tbsp vinegar
4 tbsp lemon juice
2 tbsp mustard
salt
In a jar thoroughly whisk the olive oil, the vinegar, the lemon juice, the mustard and a little salt.
With this lemon vinaigrette sprinkle the salad and sprinkle a few beads of pomegranate.
