Classic recipe for this dish. Artichokes fresh, spring, with carrots, potatoes and lemon sauce. If you are a fan of fresh artichoke, I suggest you make this dish!

It's a bit troublesome with regard to cleaning the vegetables and the artichoke, but it is a tasty and healthy food. The vegetables, sources of vitamins, minerals and fiber, are cooked easily and quickly and still remain juicy and delicious.

Ingredients (serves 6)

In a bowl of water cut into pieces 1 lemon and pour the flour (helps to avoid browning the artichokes). Peel the artichokes from the external hard leaves and remove the inside cloth cutting them in half. Pour in the water bowl.
Peel and wash the onions, carrots and potatoes. Cut vegetables into chunks. In the pressure cooker, add the oil and cut the onion in half moons and spring onions in size 2-3 cm (1 in). Mix a couple of times to sauté. |
Continue adding carrots and potatoes. Mix them a couple of times to sauté. |
Add the artichokes, with the cut side down as it is more susceptible to browning. Dill, if we put and of course, plenty of refreshing water until half covered. Salt and pepper. |
Cover the pressure cooker and cook food on low heat for 10'-15' or until vegetables are tender. Test with a fork the artichokes that should be soft. At the end of cooking make sure there is enough broth to the pot. |
Finally, dissolve the cornstarch in the juice of two lemons and pour cyclically in the cooked food, shaking the pan from the handles. Do not stir. Allow the food to a boil until the sauce is slightly thickened. Accompany the meal with kalamata olives, they are combined very nice. Or with whatever you prefer. |
