Lingonberry is a native plant that forms a bush in Scandinavia with edible, red, small fruits and has a far history in Nordic cuisine, which uses them in many dishes, fresh or frozen.
Jam with lingon-lingonberry jam, in the form of canned we knew and loved through the «IKEA», where served escorting the Swedish meatballs and where you can purchase it.
Here it was used as a base to place on it a fluffy mousse mascarpone cheese cream, cool, mild in sweetness thanks to stevia and very light taste.

Balèzès, Traditional Dessert of Lesvos Island

Balèzès
This light dessert, flavored with rosewater, has the origin of Lesbos. This was making of my mother in law, who was from there.
From what she told me, it was given in women who had just given birth, to strengthen, in order to have enough milk to breastfeed their baby. This is because it is a starchy dessert with sugar and nuts. Therefore quite energizing and suitable for new mothers.
Cold from the fridge is a very refreshing cream. It comes instead of white almonds with fresh, raw pistachio or sprinkled with cinnamon.

Kayanas

Kayanas is a delicious Greek traditional dish in a sophisticated version of the omelet with cheese and tomato. Grate some feta cheese over the top for the sake of simplicity… A dish that will fill of us and we will prepare in a few minutes.
In summer with fresh, ripe and bright red tomatoes are the best time to enjoy it. The ingredients needed for this omelet dish are minimal. Tomatoes, fresh eggs, grated cheese and a little dill.
