Ingredients (4 servings)
| In a nonstick skillet, heat the oil and spread the tomatoes in a single layer, cut into thick slices. In the intermediate spaces, add the garlic slices. Cook over low heat until soft and evaporate the water. | Using a plastic spatula turn on the other side to cook. Sprinkle each tomato slice with a little grated cheese. Leave it for a while to melt. |
In a bowl break the eggs and add the dill, parsley, 1 tsp turmeric, salt & pepper. Beat with a fork to combine ingredients. | Pour the egg mixture over the tomatoes and melted cheese and cook over medium heat. Partially cover until it begins to solidify the surface. | Then cover with a plate and invert the omelette to find the tomatoes from above. Bake for 2'-3' yet, cut into triangles and serve. |
