Ingredients for cooking (4 servings)
Soak the beans in warm water for six hours or overnight. |
Next day, drain the beans from the water they soaked, rinse and place in a saucepan with enough cold water to cover them well. Add 3 tablespoons oil, chopped onion and salt. |
Boil for 30 minutes or until tender, without being dismantled and have absorbed almost all the water boiling. Drain, keeping a minimum stock of their cooking, and let them cool. |
Dressing

Dissolve the mustard in lemon in a jar with a lid and add the garlic, lemon zest, oil and salt. Close the jar and shake forcefully to homogenize the ingredients. Put the drained beans in a bowl mix with half the onion into thin crescents or chopped and a little bit of parsley. Pour over the dressing and a little salt. Mix well. |
Serve in salad bowl and garnish from the top with a few slices of onion, which we kept, parsley and if you want cut a small hot pepper chilli round. Sprinkle with pepper. Eaten pleasantly like appetizer but also as a main dish. |
