All-in-One Chocolate Cake All-in-One Chocolate Cake

Ingredients (~9 pieces)

  • 130g (4.6oz) flour for all uses
  • 90g (3.2oz) cocoa powder without sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 200g (7.1oz) sugar
  • 1 big egg or 2 small
  • 120g (4.2oz) fresh milk
  • 60g (2.1oz) vegetable oil
  • 2 tsp vanilla extract
  • 120g (4.2oz) boiling water+1 stick instant coffee espresso or Nescafé
  • 2 large Vinsanto★ shots
  • 200g (7.1oz) couverture chocolate
  • 200g (7.1oz) sour cream at room temperature
In a large bowl, sift the flour, cocoa, baking powder, soda and salt together. Stir well with a spatula to mix the dry ingredients.
Heat the water and dissolve the coffee. Stir.
In the dry ingredients, add sugar, egg, milk, oil and vanilla extract. Beat with hand mixer at low speed for a few minutes.
Add the coffee and gently stir with a spatula to be incorporated into the mixture of the cake.
Pour the beaten mixture of cake into a glass pyrex with dimensions 22×22cm (8.7×8.7in) buttered and floured. Bake in a preheated air oven at 180℃ (356℉, Gas Mark:4.2) for 35'-40' or until a toothpick comes clear from the center of the cake.
Remove it from the oven and leave it on a wire rack to cool completely. Then sprinkle it with the sweet wine to go everywhere and absorb it and make it juicy.
In a bowl, suitable for the microwave oven, we break the couverture into smaller pieces and melt it at half the oven volume at 30', repeating 2-3 times stirring in between until it melts.
Add the cream and mix with the spatula firmly to integrate with the melted chocolate. Add a teaspoon of vanilla extract.
Spread the ganache with a spoon or spatula over the cold chocolate pie. Let it stand for a while and serve pieces, ideally with vanilla ice cream.

Instead of ★Vinsanto, the sweet wine of Santorini, we can use Vin Doux the Samian sweet wine or the liqueur of our liking.
