Favorite pies of Greek Cuisine, favorite and the ingredients, which are added each time between the phyllo -different dough phyllo- to create a rich, tasty, ingredients and aroma, pie. There are also excellent traditional pies, which are made without any dough phyllo.
The proposal here is a pie with crispy, rusty leaves in the middle, which give it a large but distinctive taste. Its predominant ingredient is leeks and pork mince. In a regional role, but equally important is cheese, eggs, sweet or sour thyme, carrot to lighten the composition, olive oil and onions, many onions.
A versatile pie in flavors and the amount of ingredients we prefer, without omitting the leek most to justify the title.

Ingredients (24 large pieces)

  • 1 packet of phyllo kneaded with oil (~6 phyllo)
  • 1kg (2.2 lbs) leeks (white and a little green, cut in washers)
  • 500g (1.1 lbs) pork mince
  • 1 tbsp tomato paste
  • 250g (8.8oz) grated Gruyère
  • 1 glass of wine trachana
  • 4 eggs
  • 1 glass of wine cognac
  • 1 grated carrot, optional
  • a little parsley finely chopped
  • 2-3 onions fresh on washers
  • 2 onions, finely chopped
  • 1 glass of olive oil
  • salt & pepper
  • sesame for above, optional
In a deep frying pan or small pot, pour a little olive oil and cook the leeks until they become transparent and glaze.
When ready, take them off and put them on a plate. In the same cookware, fry the onions for a while and then add the fresh onions.
Add the minced meat, the tomato paste and if it needs some more oil. Salt and pepper and as soon as it is ready, remove the pot from the fire and add all other ingredients, except eggs and cheese, with leeks last.
In a separate bowl, beat the eggs well and add the gruyere.
Pour the egg mixture into the minced meat mixture and mix well.
Grease the large baking pan & put in the following order: 2 phyllo well oiled top and bottom, half filling, 2 more phyllo, the rest of the filling and finally the remaining phyllo.
From the top we oil the surface, cut deep into pieces, sprinkle a few drops of water and sprinkle with sesame optionally.
Bake in a preheated oven at the resistances up and down at 180℃ (356℉, Gas Mark:4.2) for about an hour or until golden brown up and down.
