Spicy, golden brown, fluffy and particularly tasty thanks to the various fresh cheeses, which give it an unparalleled taste. The use of tabasco makes it spicy as long as our palate can withstand. These spicy tones enhance the flavor, so we enjoy a very tasty pie. Once it comes out of the oven it is like a cheese soufflé and where the cheeses have been scattered and joined to the leaves in a uniform form.

In a large bowl, crush the cheeses and sprinkle them with 2 tablespoons of fine semolina and salt pepper. Stir. Thaw and open the phyllo pastry sheet on a desktop with the long side in front of us. Separate 3 sheets, sprinkle the first with the melted butter, sprinkle scattered with part of the grated cheese & a little sweet paprika. Add second & third sheet on top repeating butter and cheese sprinkling in between. |
Roll up ends length wise and then scrunch together. We roll towards the center of the sheet the two parallel long edges to meet in the middle of the sheet. |
Roll up the rolled sheets and touch them on a well-baked 30x40cm oven pan. Place them on the short side of the pan, cutting off as long as it does not fit, which piece is in the second row next to the first. Repeat the above steps until the filling is finished. I needed 9 sheets to fill the pan. |
We cut the pie deeply, but without detaching the pieces, with 3 parallel longitudinal cuts. In a large bowl, add the eggs, salt pepper and tabasco drops. Beat the ingredients to mix well. |
Pour the egg mixture over the cheese pie. We let 30' to absorb it. Bake in preheated oven with fan at 175℃ (347℉, Gas Mark:4) for 45'-50΄. |
