Ingredients (~12 pieces)

In a large bowl pour milk, olive oil and eggs. Beat very well at low speed of a hand mixer for a few minutes to homogenize. |
Add sifted flour, together with baking powder, gradually in three portions. |
Add grated halloumi, mint and raisins to the bowl mix. Stir gently with a spatula to incorporate. |
Pour the mixture into a greased and floured bunt tin with a hole in the middle and a diameter of Ø20-22cm.
| Bake in a preheated oven at the bottom of the oven at 170℃ 338℉ (Gas Mark:3.5) for 45′-50′ or until a skewer comes out dry, without crumbs. Remove from the oven and cool in tin for 10′ before flipping onto a cooling rack. Slice and enjoy!
