Ingredients (~10 pieces)

To the bowl of a stand mixer fitted with the wire whip attachment pour the oil, sugar & yogurt. Beat them together, at low speed, for a few minutes until a blend comes together, which will look like a viscous cream. From this mixture we hold aside 200 grams, which will glaze the apple cake surface after baking. |
In the rest of the mix of the bowl add the eggs and beat them well to inflate the mixture and make it fluffy. |
Gradually add flour in three portions as well as baking powder, soda & vanilla. |
Stop the mixer and pour in the bucket the candied fruit. Mix gently, bottom-up, with a spatula, to incorporate into the battered apple cake mixture. | Laminate a non-stick oven container with dimensions of 25×35cm (9.8in×1ft, 1.8in). Empty the mixture and spread it all over the base of the pan. We straighten its surface to become flat. |
Wash and clean the apples. Cut them into 4 and remove the inner spores. Cut them into slices, which are slightly dipped in rows, one apple slice below each other. From above we scatter the raisins. |
Bake the apple cake in a preheated oven at 175℃ (347℉, Gas Mark 3.9) for ~40'. If it gets color fast we cover it with foil which we remove 10' before the end. |
Remove the apple cake from the oven and, as it is hot, spread it with a brush of yogurt glaze, which we have kept aside. Allow to cool completely and then cut into pieces. |
